Cabernet Sauvignon and Cabernet Franc





The two most wide-spread blue vines in the world, Cabernet Sauvignon is also knows as the king of red varieties. It is an important sort in the Bordeaux region in France, but it is also grown in all wine producing countries. The Cabernet wines are usually slow to ripe; their full maturity is reached after 3-4, in good years after 5-6 years. After ripened in wooden casks, the wines can be further ripened in bottles for years. Especially in the wines made from relatively less ripe sauvignon grapes, a flavour resembling paprika can be felt in the young wine, together with a slight scent of black currant, which will develop into a complex harmony of flavours after a long ripening period.
